Cozy bowl of chicken noodle soup served in a white fluted bowl, topped with fresh parsley, a sprinkle of parmesan, and a drizzle of olive oil on top, with a linen napkin and bread on the side.

Thereโ€™s nothing like homemade soupโ€ฆ especially when it starts with a rotisserie chicken.

If thereโ€™s one meal that feels like a warm hug, itโ€™s this Garlic & Herb Chicken Noodle Soup. I made it in my honeydew green Dutch oven on a crisp Sunday afternoon โ€” Ember was napping, the house smelled like fresh herbs and butter, and I couldnโ€™t help but smile thinking, โ€œthis is mama magic.โ€

As soon as the weather turns chilly, I crave a big pot of something hearty and healing simmering on the stove. This one checks every box โ€” cozy, deeply nourishing, and perfect to freeze for later. I love keeping a few containers tucked away in the freezer, so when someone in the family starts to feel under the weather, weโ€™ve got real chicken soup ready to go โ€” no extra effort needed.

Itโ€™s made extra nourishing with homemade bone broth (donโ€™t worry, itโ€™s easier than it sounds!) and filled with cozy flavors from leek, lemon, and fresh herbs. I love using a rotisserie chicken here โ€” it gives that slow-simmered flavor with half the effort, perfect for a weekend kitchen rhythm that still leaves time for rest.

๐Ÿ‹ Healthy Swaps & Nourishing Notes

  • Homemade Bone Broth = Liquid Gold: Itโ€™s rich in collagen, minerals, and flavor. If youโ€™ve never made it, this is your sign! Using a rotisserie chicken means half the work is already done โ€” and youโ€™ll get double duty from one bird.
  • Gluten-Free Option: Swap shell noodles for chickpea or brown rice pasta.
  • Extra Veggies: Add spinach, kale, or zucchini noodles at the end for a nutrient boost.
