About Amy
Hi, I’m Amy — and I’m so glad you found your way here. 🍈
I’m a mama to the sweetest little girl named Ember, a lover of slow mornings, simple nourishing food, and the kind of memories that sneak up on you in the middle of making french toast.
This is Healthy Honeydew — my kitchen, my philosophy, and my little corner of the internet.
How It All Began
Healthy Honeydew was born out of a season of life that asked me to slow down and get back to basics. I needed meals that were simple, nourishing and actually doable on the busiest of days. When I couldn’t find quite what I needed — I started creating it myself.
But somewhere along the way it became something more than recipes.
It became a philosophy.
Simplify. Slow Down. Add Joy.
Those three words are the filter I run everything through — in the kitchen and in life. Simple meals that make the week feel calmer. Slow Sunday mornings with something warm on the stove. Joy in the seasonal, the nostalgic, the ordinary beautiful moments we so often rush past.
Why Healthy Honeydew?
There’s something about the word honeydew that feels like a memory. A plate of fresh honeydew at the dinner table. A summer afternoon. Something your mom would do. Bright and simple and quietly nourishing — that’s exactly what I want this space to feel like. ☀️🍈
What You’ll Find Here
Simple, wholesome recipes for your table — from slow Sunday morning breakfasts to easy weeknight dinners. Food made with real ingredients, a little nostalgia and a whole lot of love.
But also — the life behind the food. The slow mornings. The little hands in the kitchen. The seasonal outings and the ordinary days that somehow become the ones you remember most.
This isn’t just a recipe blog. It’s a slow living kitchen. And you’re always welcome here. 🌿
Come Find Me on Sundays
Every Sunday morning I send a little letter called A Sunday Note — one fresh recipe, sweet finds I’m loving lately and one sweet moment worth savoring. Warm, honest and written from my kitchen to yours.
A Little More About Me
I live in New England with my husband Tom and our little ray of sunshine Ember — where the seasons are dramatic, the summers are short and every sunny afternoon feels like a gift. You’ll find me most days with an iced coffee, watching Ember discover the world one tiny moment at a time.
I believe the most nourishing things in life are often the simplest. A warm meal shared with the people you love. Fresh flowers on the breakfast table. A slow Sunday with nowhere to be.
That’s what Healthy Honeydew is really about.
Simple ingredients. Slow mornings. The ordinary days that end up meaning everything. 🌿
With warmth,
Amy Belle
