
When the mornings get crisp and the air smells like cinnamon and apples, this Apple Banana Bread is my go-to. Moist, cozy, and naturally sweetened, it’s filled with diced apples and mashed bananas, and topped with a buttery cinnamon streusel that fills the kitchen with the warmest aroma.
It’s simple enough for a weekday breakfast, but beautiful enough to share at brunch or gift to a friend. I love a slice warm with coffee, or later in the day with chamomile tea and a little drizzle of maple syrup.

Ingredients:

Bread
- 1 ½ cups white whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- 1 cup mashed ripe banana (about 2 medium)
- ¼ cup pure maple syrup or honey
- ¼ cup melted butter (or coconut oil)
- 2 large eggs
- 1 tsp vanilla extract
- 1 small apple, peeled and finely diced

Cinnamon Streusel Topping
- ¼ cup white whole wheat flour
- ¼ cup coconut sugar or brown sugar
- 1 tsp cinnamon
- 2 tbsp cold butter, cubed
Instructions:
- 1) Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- 2) Whisk together flour, baking soda, baking powder, salt, and cinnamon in a medium bowl.
- 3) Mash bananas in a large bowl, then whisk in maple syrup, melted butter, eggs, and vanilla.

- 4) Fold dry ingredients into wet until just combined, then gently fold in diced apple.

- 5) Mix streusel ingredients with a fork until crumbly.
- 6) Pour batter into the loaf pan, sprinkle streusel on top, and bake 50–60 minutes, until a toothpick comes out clean.

- 7) You’re done! Let cool 10 minutes in pan before transferring to a rack. Serve warm.
