Dry Ingredients
- 1 1/2 cups white whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp cinnamon
Wet Ingredients
- 1 cup mashed ripe banana (about 2 medium)
- 1/4 cup brown sugar or pure maple syrup (I like organic cane sugar)
- 1/4 cup melted butter (or coconut oil works too)
- 2 large eggs
Cinnamon Streusel
- 1/4 cup white whole wheat flour
- 1/4 cup brown sugar or coconut sugar
- 1 tbsp cinnamon
- 2 tbsp cold butter, cubed
Preheat oven to 350Β°F (175Β°C). Grease or line a loaf pan with parchment paper.
Whisk together flour, baking soda, baking powder, salt, and cinnamon.
Mash bananas, then whisk in brown sugar, melted butter, eggs, and vanilla.
Fold dry ingredients into wet, then fold in apple.
Mix streusel ingredients until crumbly.
Pour batter into pan, sprinkle streusel on top, bake 50β60 min
Cool 10 min, then slice and serve. β¨
