For the Egg Scramble
- 3 large eggs
- 1/4 cup diced cooked ham
- 1/4 cup shredded swiss cheese
For the Potatoes
- 1 medium russet or Yukon gold potato peeled and cubed
- 1 tsp garlic powder
- 1 pinch sea salt & black pepper to taste
- 1 tbsp olive oil
For the Avocado & Fruit
- 1/2 avocado sliced
- 1 sprinkle sesame seeds optional
- 1/2 fresh nectarine sliced
- 1 tsp Raw Honey for drizzling
Preheat air-fryer to 400°F (200°C). Toss cubed potatoes with oil, salt, pepper, and garlic powder. Air-fry for 12–15 minutes until golden and crisp, shaking halfway through.
Whisk eggs in a bowl with a pinch of salt. Melt a touch of butter in a skillet over medium-low heat and cook eggs, gently stirring until soft and fluffy.
In the last minute of cooking, fold in the diced ham and top with swiss cheese, letting it melt over the eggs.
Transfer the cheesy ham and eggs to a serving plate alongside the crispy air-fryer potatoes, fresh avocado, and nectarine slices. Enjoy warm!
• Substitutions & Swaps: Substitute swiss cheese with provolone or white cheddar, and swap nectarines for seasonal berries or citrus depending on the time of year.
• Texture Tip: Do not overcrowd your air-fryer basket so the potatoes get maximum crispiness on all sides.
• Meal Prep & Storage: Cube and store raw potatoes in water in the fridge overnight for even faster morning prep.
