- 2 cups frozen strawberries or fresh, roughly chopped
- 2 tbsp honey
- 1 tsp lemon juice
- 1.5 tbsp chia seeds
Add strawberries, honey and lemon juice to a small saucepan over medium heat.
Cook 8—10 min stirring occasionally until strawberries completely break down and turn a deep ruby red.
Remove from heat and stir in chia seeds.
Cool 15 min in pan then transfer to a jar. Refrigerate 30 min until thickened.
Chia seeds are one of the highest fiber foods you can eat — just 1.5 tablespoons adds about 5 grams of fiber to the whole batch. Strawberries are packed with Vitamin C and antioxidants. Sweetened only with raw honey — no refined sugar anywhere.Amy's Kitchen Tips:
- Frozen strawberries work perfectly and are available year round — no need to thaw first
- The jam will look loose when it first comes off the heat — the chia seeds thicken it as it cools, give it time
- Deep dark red color as it cooks is a good thing — that is caramelized flavor not burning
- Any berry works — try raspberries, blueberries or a mixed berry version
- Storage: Refrigerate up to 2 weeks in a sealed jar
