Eggs are one of those perfect first foods for little ones, but texture matters. Most baked eggs get spongy, which isn’t ideal for toddlers still learning to chew. I developed these egg fingers to be custard-firm instead—tender enough to gum, firm enough to grip safely—thanks to the Greek yogurt and almond flour that keep them cohesive. They’re perfect for breakfast, lunch, or snack time, and they actually stay in one piece instead of crumbling.

As a mom, I love making finger foods for her because I can hand her one and she just toddles around her play area with it, getting back to her thing while I get back to mine. Make a batch on Sunday and keep them in the fridge for the whole week. Pair them with her favorite fruits like blueberries or strawberries and a side of lightly buttered toast and you’ve got a full meal. (They also freeze beautifully if you want to batch-make and save for later.)

Notes

Eggs provide complete protein and choline for brain development. Greek yogurt adds probiotics for gut health. Spinach is packed with iron and folate. Together, these fingers deliver sustained protein and nutrients that keep little ones full and focused.
Amy’s Kitchen Tips:
  • The yogurt and almond flour create that custard-firm texture on purpose—this prevents the sponginess that eggs can sometimes give and are not ideal for little ones
  • How to know they are done: A toothpick comes out clean and the eggs have just become firm
  • For babies 6+ months, dip fingers in whole milk Greek yogurt for extra protein and creaminess or simply add a light drizzle of extra virgin olive oil for healthy fats and antioxidants
  • For babies under one, skip the salt and opt for a lower sodium cheese like shredded mozzarella

Notes & Swaps

Make it a full meal: Serve at room temperature with a tiny dish of whole milk Greek yogurt for dipping, your little one’s favorite fruit on the side and lightly buttered toast fingers for them to grab.

Swaps: Zucchini, diced tomato, or shredded mild cheese (cheddar, mozzarella) work beautifully in place of spinach.

Storage: Keep in an airtight container in the fridge up to 5 days, or freeze on a tray then transfer to a freezer bag for up to 3 months. Thaw at room temperature or warm gently.
