I know you have made salmon before. But have you ever made salmon BITES? This is my new favorite way to cook it and honestly I do not think I am going back. I have always used the airfryer for salmon — easy cleanup, comes out perfectly every time — but when you cut it into little nuggets and glaze them with chipotle powder, honey and a splash of soy sauce something really magical happens. They get all kinds of caramelized and golden at the edges, slightly charred, smoky and sticky in the best way. So much more flavor, a little more texture and just a really fun way to eat salmon on a weeknight.

This bowl has everything going for it — nuggets piled over hearty brown rice with edamame, finished with a two ingredient lime crema that takes thirty seconds to make and pulls the whole thing together beautifully. Twenty minutes, one pan, barely any cleanup. This deserves a spot in your weekly salmon rotation — and the best part is you can mix it up every single time to keep it interesting. Swap the rice for noodles or cauliflower rice, trade the edamame for roasted broccoli or snap peas, add avocado, mango salsa or pickled onions. The nuggets are the hero and they go with absolutely everything.

What You Need

Five ingredients plus pantry staples. Frozen edamame. This meal comes together so quickly.

For the salmon bites:

  • 12 oz salmon fillet, skin removed, cut into 1.5-inch cubes
  • 1 tsp chipotle powder
  • ½ tsp garlic powder
  • 1 tbsp raw honey
  • 1 tsp soy sauce

For the bowl:

  • 1 cup brown rice, cooked (jasmine works too — brown rice gives more heartiness)
  • 1 cup frozen edamame, shelled and thawed or quickly microwaved

Lime Crema:

  • 3 tbsp full-fat Greek yogurt
  • Juice of half a lime + ½ tsp lime zest
  • Pinch of salt

To finish:

  • Sriracha honey drizzle — 1 tsp sriracha + 1 tsp honey, mixed
  • Light drizzle of soy sauce over the finished bowl
  • Sesame seeds
  • Fresh cilantro
  • Lime wedge

How to Make It

1. Marinate the salmon Pat the salmon cubes completely dry — this is the most important step for getting a good char. Toss with chipotle powder, garlic powder, honey and soy sauce until every piece is evenly coated. Let it sit for five minutes while you get everything else ready.

2. Airfry the salmon Airfry at 400F for 8 to 10 minutes, shaking the basket halfway through. Space the cubes out as much as possible — crowding the basket leads to steaming rather than caramelizing. You want deep color and slightly charred edges. The honey will lacquer and char at the edges and that is exactly what you are after.

3. Make the lime crema Stir Greek yogurt, lime juice and lime zest together with a pinch of salt. Refrigerate until serving. The zest in the crema makes it taste considerably more interesting than yogurt and lime alone.

4. Build the bowls Brown rice as the base. Edamame scattered over. Salmon bites piled in the center.

5. Top it all off Sriracha honey drizzle over the whole bowl. Lime crema. Light soy sauce drizzle right at the end. Sesame seeds and fresh cilantro. Lime wedge on the side, done!

Ingredients

  • 1 tsp sesame seeds to sprinkle on top
  • 1 tbsp soy sauce drizzle over bowls
  • 1 tsp cilantro garnish
  • 1/2 lime lime wedges garnish

Instructions
 

  • Cube salmon fillet into 1 inch pieces. Pat salmon dry. Toss with chipotle, garlic powder, honey and soy. Rest 5 min.
  • Airfry 400F for 8–10 min shaking halfway. Do not overcrowd. Cook until deeply caramelized and charred at the edges.
  • Stir lime crema together. Refrigerate until serving.
  • Build bowls: brown rice base, edamame, salmon bites in the center.
  • Sriracha honey drizzle, lime crema drizzle, light soy drizzle. Sesame seeds, cilantro, lime wedge.

Notes

Salmon bites get more caramelized and flavorful than a whole fillet — the extra surface area means more glaze, more char, more flavor in every bite. Pair with brown rice and edamame for a protein packed bowl that keeps you full for hours.
Amy’s Kitchen Tips:
  • Don’t overcrowd the airfryer basket — more space = more char and caramelization
  • Soy sauce goes on at the very end as a finishing drizzle, not into the marinade
  • Lime zest in the crema makes a real difference — worth the extra 30 seconds
  • Frozen edamame straight from the microwave works perfectly here
  • Add avocado slices if you have them — creamy and beautiful in this bowl

Notes and Swaps

On the soy sauce: A light drizzle over the finished bowl rather than worked into the marinade is intentional. It adds depth and umami as a finishing touch — the way you would finish a dish with good olive oil or flaky salt. It lands on top, you can see it, and it ties the whole bowl together without disappearing.

On the edamame: Frozen edamame is genuinely great here. It thaws quickly in the microwave and adds clean plant-based protein alongside the salmon.

On the rice: Brown rice over jasmine is the right call for this bowl. It is heartier, more textured and the warm golden color photographs beautifully under the caramelized salmon. Cook it in the rice cooker while you prep everything else and it is completely hands off.

No sesame oil: We cook without sesame oil in our house. The soy sauce drizzle at the end does the same flavor work — adding that savory depth — without it.

On the char: Space the salmon cubes out as much as possible in the airfryer basket. Some overlap is fine but crowding creates steam rather than caramelization. The pieces that get the deepest char are the best ones — do not be afraid of it.

Make it your own: Add avocado slices alongside for healthy fat and a beautiful green contrast. Swap edamame for frozen peas if that is what you have. Use jasmine rice for a lighter bowl.
